THE GRAPE AND THE LAND

Catarratto is one of the most important indigenous grapes from the island of Sicily and the most widely planted. It is used in nearly every white blend on the island and produces a consistent, drinkable wine. We use the less common biotype called Catarratto Bianco Lucido which is known for making higher quality, elegant wines that are more complex, full of juicy acidity and pleasant minerality. Our north and east facing vineyards on Monte Bonifato is over 650m above sea level on pure calcareous rock with a very thin, poor topsoil.
THE WINE
- 100% Catarratto Bianco Lucido

- Grapes were harvested in mid-September, gently pressed and cold fermented at 57° F/13° C for 15 days, and then simply aged for 4 months in concrete tanks.
- TA: 6.0 g/L pH: 3.10
- An incredibly versatile white wine that can be enjoyed with a number of dishes. It’s classic notes of tropical fruit and green almond lend well to difficult to pair foods like artichoke and asparagus.

Grillo 2019

Grillo is a relatively recent indigenous grapes from the island of Sicily. It is the child of Zibibbo and Cataratto Bianco Lucido and was originally created to make extremely high quality Marsala wine. It has since gained immense popularity as a dry still white made in a variety of styles. We opt for the most aromatic expression from a vineyard at 400m above sea level with lean marine clay soil. Located at the base of Monte Bonifato, it is blessed with perfect growing conditions for the style Grillo we were hoping for.
THE WINE
- 100% Grillo
- DOC Sicilia
- Grapes were harvested the first week of September, cold macerated for 24 hours to extract maximum aromatics, gently pressed and cold fermented at 55° F/12° C for 15 days, and then simply aged for 6 months in concrete tanks.
- TA: 6.4 g/L pH: 3.15
- The pretty aromatics of this wine make it an adept partner for crudo, white fish, and even spicy food.

Rosato di Frappato 2019

Vittoria | Sicily | Italy
Frappato is one on the many extraordinary indigenous grapes from the island of Sicily. It thrives in the sandy soils of Vittoria in the southern part of the Island where it produces light, refreshing reds. Though most commonly blended with Nero d’Avola, alone it is a red worthy of a variety of foods from fish to spiced North African fare. We use Frappato for our rosato because we love it’s vibrancy, bright red fruit character, and gorgeous color.

- Grapes were harvested in mid-September, gently pressed and left on the skins for just 4 hours, cold fermentation at 55° F/12° C for 15 days, and then simply aged for 4 months in concrete tanks.
- TA: 6.3 g/L pH: 3.10
- Enjoy with anything from salads, crudo, and cold appetizers to white meat and fish dishes.

Frappato 2018

Frappato is one on the many extraordinary indigenous grapes from the island of Sicily. It thrives in the sandy soils of Vittoria in the southern part of the Island where it produces light, refreshing reds. Though most commonly blended with Nero d’Avola, alone it is a red worthy of a variety of foods from fish to spiced North African fare.

- Grapes were harvested at the end of September, fermentation at 60° F/15° C for 12 days, and then simply aged for 12 months in concrete tanks.
- TA: 6.2 g/L pH: 3.4
- Delicious served chilled and works wonderfully as a red for fish as well as spiced dishes.

Nero d’Avola 2018

Nero d’Avola is arguably the most important indigenous red grape from the island of Sicily. It grows well just about everywhere on the island, but is often over extracted and aged in oak. Our goal in making this Nero d’Avola was letting the delicious vinous quality of the grape shine through. Our vineyard is located at the base of Monte Bonifato at 350m above sea level with clay soils that are very poor in nutrients creating the perfect conditions for bright, fresh red wine.
THE WINE
- 100% Nero a’Avola
- DOC Sicilia
- Grapes were harvested in mid-September, cryomacerated for for 24 hours to preserve freshness, followed by fermentation at 62° F/16° C for 10 days, and then simply aged for 8 months in concrete tanks.
- TA: 6.2 g/L pH: 3.4
- An excellent alternative where you might use any medium bodied Italian red. Grilled meats, sausages, tomato based sauces, etc.

Nerello Mascalese 2018

Sambuca in Sicilia | Sicily | Italy
Nerello Mascalese is an indigenous grape from the island of Sicily that has gained recent fame for the wines it produces on Mount Etna. The grape is naturally high in tannins and light in color, though when grown on lower sandy soils like those we find on the opposite side of the island from Etna in the Southwest, it can be more approachable when young.
THE WINE
- 100% Nerello Mascalese
- IGT Terre Siciliane
- Grapes were harvested in mid-September, a short 4 day maceration at low temperature to keep the tannins light, fermentation at 65° F/18° C for 12 days with native yeasts, and then simply aged for 15 months in concrete tanks.
- TA: 5.7 g/L pH: 3.6
- An excellent alternative where you might use any medium bodied, earthy Italian red. Grilled meats, sausages, tomato based sauces, etc.

Perricone 2018

Perricone is likely one of the least well known of the indigenous red grapes from the island of Sicily. It is regularly blended and rarely allowed to shine on it’s own. Our goal in making this Perricone in purity was to show the potential of this incredible grape. Our vineyard was planted in the alberello alcamese (taller than usual to benefit from the sea breezes) at 150m above sea level with very poor clay soils creating the perfect conditions for the roots of these vines to go deep down into the earth in search of water and nutrients.
THE WINE
- 100% Perricone
- IGT Terre Siciliane
- Grapes were harvested the first week of October, cryomacerated for for 24 hours to preserve freshness, followed by fermentation at 64° F/17° C for 15 days, and then 6 months in third pass barriques to soften out the edges.
- TA: 6.4 g/L pH: 3.55
- Rich and aromatic, this is a wine for heartier fare – grilled lamb, spiced sausages like merguez, braised meats and offal.
